It is as simple as it is! Just to soak some Mung Bean or Green gram for two to three hours, that is it! That is, to wait until the peanuts grow. Sprouting is all about when the germination of seeds or legumes happen.
Before soaking it for sprouting process, you must wash the mung beans twice or thrice to remove the dirt particles away! You can do this soaking process for two hours, or you can do it for one full day.
In case of Mung bean or Green gram, it won't take that much time to reach an eatable form, say you can have it without even cooking after soaking it for two hours. Once you see that it is possible to eat in its raw form, drain all the water away and place it on a plate or a vessel of your choice, allow it to germinate overnight.
Sometimes Germination process will take some four hours or more than that, it all depends on the weather and climatic condition at that particular area.
I feel it is easy to germinate it in a cool weather climate with a lid to place on top of the plate where you allow those peas to germinate.
You can use any other legumes like black or whole white urad daal for Germination process and it has benefited you with high level of protein content.
It is good to change the water that you are soaking those daals frequently, to avoid the bacterial growth, so that you can keep your health on check.

Sprouting Salad
Take the sprouts you got after soaking it for two to three days, boil it for two minutes.
For two cups of sprouted peas, I have added the following spices mentioned below.
Turmeric powder- 1/4 tsp
Chilly and pepper powder - 1/4 tsp or based on the level of spiciness you want
Garam or chat masala - 2 to 3 pinches
Salt - as per your requirement, chat masala is the most preferable one.
The following vegetables, I have chopped it into small pieces, added it to the spiced sprouts.
Onion - one-fourth part of a full-sized one
Tomato - Half part of a full sized one
Carrot - One-fourth part of a full-sized one.
You can add some cucumbers or beans if those vegetables are available with you.
In the end, we have added a little lemon juice to it!
The point is that you can easily balance acid (that is, lemon) with other flavors such as spiciness or sweetness. And by balancing it, you can take something sour and make it delightful to the palate!
